I finally went to the grocery store today, and now all that’s left to do is laundry! I have so much to wash it’s quite ridiculous. After looking at my ever growing pile of dirty clothes, I can’t help but feel the procrastination in me kick it. Last night I went to an Indian Frat party, and it was pretty fun. I enjoyed the music, a mixture of techno-dub and bollywood hits, but my roommates would have preferred more rap and hip hop. I’m not one for frat parties, but in comparison to the hand few that I have attended it was probably the best. It’s strange to partake in normal college parties when I’ve ‘club hopped’ all around the world (for cheaper I might add). It just doesn’t measure up.
After I got back from the store, I decided to make this little treat. It’s curried tempeh lettuce wraps from Student’s Go Vegan Cookbook by Carole Raymond, and hands down it’s the best tempeh I have eaten thus far. It was simmered in apple juice for heaven’s sake! Because this was my first time trying this recipe out, I got a little fancy and juiced my own apple. I can’t say that it made a huge difference because I’ve never had it with store bought juice. You be the judge. Let’s all give a round of applause for this recipe, it deserves it.
