This might be one of the best meals I’ve had. I’ve been seriously missing the comforts of warm creamy pasta. I thought that feeling was lost when I became vegan, but just when I thought veganism couldn’t get better it did. This dish is not GF because of the field roast sausage, but if you leave that out then ka-chow! Yes, I’ve been watching Cars. My nephew is obsessed.
Pasta: 1 cup gluten free quinoa pasta, 1 field roast sausage (optional), 1/4 cup chopped parsely, 1/4 cup of yellow pepper, 1 garlic clove, onion, couple pieces of kale, half a roma tomato, tsp of earth balance or olive oil (optional— or water). Salt to taste :)
Cook the pasta, set aside. Saute everything in a nonstick pan (onion & garlic first), then ‘butter’ or oil, yellow pepper, roma tomato, kale, and lastly vegan sausage.
Sauce: Melt 1/4-1/2 cup daiya, 1 Tbsp tomato paste, and 3 Tbsp nutritional yeast over medium low heat.
Add the stuff from the saute pan into the sauce, mix everything together voila.
